Bedmi Puri is a type of stuffed puri, deep-fried bread made with whole wheat flour. The puri is filled with a flavorful mixture made from coarsely ground, skinless split black gram (dhuli urad dal) and a blend of aromatic and flavored spices. The typical spices include cumin, fennel, coriander, Kasuri methi (dried fenugreek leaves), and asafetida etc.
To prepare the filling, the dal mixture Spices Powder Masala is soaked in a small amount of water until it forms a thick paste. This paste is then sealed inside the puri dough, which is rolled out and deep-fried until golden and crispy. For extra crispiness, the puris can be fried twice: first on a medium flame and then on a high flame.
Bedmi Puri originates from North Indian cuisine, particularly in the state of Uttar Pradesh. It is a popular breakfast dish that is often enjoyed with accompaniments Allabadi Dum Aloo Dish or Dubki Wale Aloo.
